Our Infused EVOO

We are a leading producer of ultra premium infused oils for the specialty food service industry. Our customers include gourmet shops, olive oil tasting rooms, restaurants and even a few celebrity chefs!

We work exclusively with all-natural ingredients. Currently, we supply 12 delicious infusions: Habanero, Chipotle, Jalapeño, Chile Ancho, Ghost Pepper, Basil, Rosemary, Ginger, Sicilian Lemon, Wild Mushrooms, Garlic and Coconut. We also develop customized flavors or flavor combinations for some of our customers. Base EVOO

In general, olive oil is an effective carrier of flavor and aroma. However, some olive oils perform better than others. The oil should complement and enhance flavors, not contradict or overpower them. Developing the best flavor combinations is more of an art, than a science.

Each year, shortly after every harvest, we search for the best base EVOO for our infusions. Currently, our base oil is a light-to-mild Baja California EVOO. This particular EVOO has a superb ability to absorb, carry, enhance and deliver a wide variety of mouthwatering flavors. 

We adhere to the highest standards when it comes to base EVOO selection. The oil should be gourmet-quality, with all-around high marks in laboratory testing. We demand first-cold-pressed oil with free fatty acidity below 0.3%, peroxides below 10.0, as well as a flawless organoleptic testing. These parameters exceed IOC standards for the "extra virgin" category.
